Cannoli Stuffed French Toast
Ingredients:
- ricotta cheese - 1 cup
- powdered sugar - 1/4 cup
- vanilla extract - 1/2 t
- semi sweet chocolate chips - 1/3 cup
- eggs - 2
- heavy cream or milk - 1/4 cup
- French bread - 4 slices
- butter - 2 T
- powdered sugar - for serving
Instructions:
1 c ricotta cheese 1/4 c powdered sugar 1/2 t vanilla extract 1/3 c semi-sweet chocolate chips 2 eggs 1/4 c heavy cream or milk 4 slices French bread
2 T butter Powdered sugar-for serving
In a small bowl, combine ricotta cheese, powdered sugar and vanilla extract. Stir in the mini chocolate chips; set aside.
In a shallow bowl or pie plate, whisk eggs and cream together. Spread all the ricotta mixture on 2 slices of bread. Place the other slice of bread on top and gently press together. Carefully dip both sides of each sandwich into the egg mixture until well coated.
In a skillet, melt the butter. Add the sandwiches, cook until golden, about 4 minutes per side. Cut the sandwiches in half on the diagonal and place on serving plate, dust with powdered sugar. Serve hot.
