Cinnamon Apple Pancakes
Ingredients:
- almond flour - 3 cups
- sugar - 2 T
- baking powder - 2 tsp
- ground cinnamon - 1 T
- salt - /2 tsp
- chopped dried apples - 1/4 cup
- unsweetened almond milk - 1 1/2 cups
- eggs, lightly beaten - 4
- vanilla extract - 2 tsp
Instructions:
In a bowl, mix together flour, sugar, baking powder, cinnamon, salt and apples.
In a second bowl, combine almond milk, eggs and vanilla extract. With a fork, blend in flour mixture until moistened but still lumpy.
Coat a griddle with cooking spray, heat over medium heat. Pour some batter onto the griddle, cook for 3 - 4 minutes or until top is bubbly. Carefully flip and cook for 1 minute longer. Place pancakes on serving plate, serve with pure maple syrup, if desired. Yield 10 - 8 inch pancakes.
