1 c flour
1 c cornmeal
2 t baking powder
1 t baking soda
1/2 t salt
1 1/2 c shredded sharp Cheddar cheese
3 eggs
1 c buttermilk
1 c club soda
1/3 c canola oil
cooking spray
In a bowl sift together flour, cornmeal, baking powder, baking soda and salt. Stir in cheese. Combine eggs, buttermilk, soda and oil; stir into dry ingredients, just until blended.
Coat waffle iron with cooking spray. Pour batter onto preheated waffle iron. Cook 3-5 minutes or until crisp and done. Repeat with remaining batter.
To keep waffles warm, place on baking sheet, (do not cover) in a 200 degree oven until ready to serve. Waffles can be frozen and reheated in oven.
Serve with butter and syrup OR top with chili, a dollop of sour cream and shredded cheese.
