Cream Cheese Pancakes
Ingredients:
- cream cheese - 4 ounces
- eggs - 4
- vanilla extract, optional - to desired taste
Instructions:
In a blender, blend eggs and cream cheese until smooth. Add vanilla, blend until smooth. Let batter rest while the griddle heats.
Butter hot griddle, pour 1/4 cup batter onto the hot surface. (Batter will spread out a lot; these are very thin pancakes.) Cook for a couple minutes on the first side, just until golden, carefully flip and cook another minute or so on the other.
Place on a plate, serve hot with your favorite topping, powdered sugar sprinkled over top, or drizzle with syrup, honey, jam, etc.
