Croissant French Toast
Ingredients:
- croissants - 4 - 6 (depending on size)
- eggs - 3
- milk - 1 cup
- sugar - 1/4 cup plus 1 t
- vanilla extract - 1 T
- chocolate chips - 1/2 cup
Instructions:
Coat an 8 x 8 inch baking pan with cooking spray. Place croissants in the pan in a single layer, squeezing them to fill entire pan. In a bowl, whisk together eggs, milk, 1/4 cup sugar and vanilla. Slowly pour over croissants. Sprinkle chocolate chips over the top.
Gently press to submerge all the croissants. Place a plate on top of pan to keep croissants submerged, place in refrigerate for 1 hour. Remove pan from refrigerator, remove plate, cover with foil.
Bake in a preheated 350 degree oven for 40 - 45 minutes until set. Turn oven off and turn broiler on. Remove pan from oven, remove foil and sprinkle 1 teaspoon sugar evenly over the top. Broil for 1 - 2 minutes, until croissants brown on the top. Serve warm.
