German or Dutch Pancakes
Ingredients:
- eggs - 6
- milk - 1 cup
- flour - 1 cup
- salt - 1/2 t
- butter - 2 T
- sugar - 1 1/2 cups
- buttermilk - 3/4 cup
- butter - 1/2 cup
- corn syrup - 2 T
- baking soda - 1 t
- vanilla - 2 t
Instructions:
Place eggs, milk, flour and salt in a blender; cover and process until smooth. Melt 2 T butter in a 13 x 9 inch baking dish. Spread batter evenly in prepared pan.
Bake, uncovered, in a preheated 400 degree oven for 20 minutes. Remove from oven and dust with powdered sugar. Serve immediately with buttermilk syrup.
Prepare buttermilk syrup -- in a saucepan, combine sugar, buttermilk, 1/2 cup butter, syrup and baking soda; bring to a boil. Boil for 7 minutes. Remove from the heat; stir in vanilla. Serve.
