Hash Brown Egg Nests
Ingredients:
- frozen hash browns, thawed - 10 ounces
- shredded cheddar cheese - 1 cup
- olive oil - 1 T
- eggs - 8
- salt and pepper - to desired taste
- bacon, cook, crumbled - 2 slices
- shredded, cheddar cheese - 1 T
- parsley, chopped - 1/2 T
- avocados, sliced, chilled - 2
Instructions:
In a bowl mix together hash browns, salt, pepper, olive oil and 1 cup cheddar cheese. Divide mixture into 8 greased cups of a muffin tin. Pack mixture tightly and shape into cups. Bake in a preheated 425 degree oven for 15 minutes until edges brown and cheese is melted.
Crack a egg into each nest; season with salt and pepper. Sprinkle crumbled bacon, 1 T cheddar cheese and parsley over top. Bake at 350 degrees until egg whites are set, 13 - 16 minutes. To remove, gently run a knife around the edges and use a fork to lift them out of the pan. If deserved serve with fresh fruit or chilled avocado slices.
