1 sheet of puff pastry
6 medium eggs
2 T butter, melted
1 small onion, chopped
3 slices bacon, fried and crumbled
2 T extra virgin olive oil
Parmesan cheese, freshly grated
salt and pepper to taste
1 bunch parsley
Cut pastry into squares a little larger than muffin cups. Place pastry into a muffin cups making tiny wells. Brush with melted butter.
Brown onions in olive oil; season with salt and pepper. Spoon onions into pastry wells, add bacon and one egg per puff square. Bake at 400 degrees for 10 minutes.
Remove from oven, top with Parmesan cheese and garnish with parsley. Serve hot.
