Mini German Pancakes
Ingredients:
- milk - 1 cup
- eggs - 6
- flour - 1 cup
- salt - 1/2 t
- vanilla extract - 1 t
- orange zest, optional - 1 t
- butter, melted - 1/4 cup
Instructions:
In a blender, blend together milk, eggs, flour, salt, vanilla and organge zest. Make sure flour clumps get well-blended. Blend in butter a LITTLE at a time.
Grease muffin tins well and divide batter evenly between 24 tins. Bake in preheated 400 degree oven for 15 minutes, until puffy and golden on top.
Dust with powdered sugar and serve with your favorite topping.
