Overnight Custard French Toast
Ingredients:
- sweet French baguettes (cut into 2 1/2 inch thick slices) - 2 loaves
- whole milk - 4 cups
- eggs - 4
- sugar - 1/3 cup
- vanilla - 1 T
- lemon zest, finely grated - 1 t
- salt - 1/3 t
- nutmeg - dash
- butter and oil for frying -
Instructions:
In a bowl combine milk, eggs, sugar, vanilla, lemon zest, salt and nutmeg; mix well. Place bread in a pan large enough to hold all slices without stacking. Pour milk mixture over bread. Bread will float. Cover and let sit for 10 - 15 minutes. Flip bread slices over and let soak until all the batter has been absorbed. Cover and place in refrigerator overnight.
In a frying pan, heat some butter and oil over medium-high heat. Fry the soaked bread until golden brown on each side, then place on a cookie sheet. Continue browning all slices, adding more butter and oil as needed, temperature may need to be lowered to medium.
Bake in a preheated 350 degree oven for 20 minutes. Serve immediately with butter and maple syrup.
