Pecan French Toast
Ingredients:
- packed brown sugar - 1 cup
- butter, melted - 1/3 cup
- light Karo corn syrup - 2 T
- chopped pecans - 1/2 cup
- grated orange rind - 1 t
- fresh orange juice - 1 cup
- milk - 1/2 cup
- sugar - 3 T
- ground cinnamon - 1 t
- vanilla - 1 t
- egg whites - 3
- eggs - 2
- French Bread, cut 1 inch thick - 12 slices
Instructions:
In a bowl, combine brown sugar, butter and corn syrup; pour into a 13 x 9-inch baking dish coated with cooking spray. Sprinkle pecans over sugar mixture. Place bread slices over pecans.
In a second bowl, whisk together orange rind, orange juice, milk, sugar, cinnamon, vanilla, egg whites and eggs, pour over bread. Cover, place in refrigerator overnight.
Carefully turn bread slices over to absorb excess egg mixture. Let stand at room temperature 20 minutes.
Bake in a preheated 350 degree oven for 35 minutes or til lightly brown. Serve hot.
