Pecan Pancakes
Ingredients:
- flour - 2 cups
- baking soda - 1 t
- salt - 1 t
- sugar - 1 T
- egg, whisk till light and fluffy - 1
- buttermilk - 2 cups
- pecans, if desired -
- mini chocolate chips, if desired -
Instructions:
Mix dry ingredients together, slowly sir in buttermilk. Stir in egg just until incorporated (DO NOT over mix).
Lightly grease a griddle and heat to 375 - 400 degrees. Pour about 1/3 c of batter onto the griddle. Sprinkle on pecans or chocolate chips. Cook until golden, flip and cook the other side.
Serve hot with your favorite topping -- butter pecan, maple, chocolate gravy, etc.
