Salted Caramel Waffles
Ingredients:
- flour - 2 cups
- salt - 1/2 t
- sugar - 1 T
- baking powder - 2 t
- baking soda - 1 t
- buttermilk - 2 cups
- eggs - 2
- butter, melted - 4 T
- vanilla - 1 t
- salted caramel - 1/4 cup
- brown sugar - 2 cups
- salted butter, cut into pieces - 3/ 4 cup
- cream - 1 1/4 cups
- sea salt - 1 T
Instructions:
In a bowl, whisk together flour, salt, sugar and baking soda. In a second bowl mix together buttermilk, eggs, 4 T butter and vanilla. Pour wet mixture into dry mixture, stir together just until combined. Stir in salted caramel (recipe below). Pour batter into waffle iron, cook. Serve immediately with salted caramel syrup or your favorite syrup.
Prepare salted caramel -- place brown sugar in a heavy bottomed 3 quart saucepan over medium heat. Stir until sugar has started to melt and begins to clump together. Lower heat to low, add 3/4 cup butter, stir constantly until melted and mixture is smooth. Remove from heat and slowly stir in cream and 1 T sea salt; stir until caramel is smooth and glossy. Cool slightly and pour into an airtight container for storing. Yield 3 cups.
