Sugar Crusted French Toast
Ingredients:
- eggs - 3
- milk - 1/2 cup
- heavy cream - 1/3 cup
- pure vanilla extract - 2 t
- ground cinnamon - 1/4 t
- sea salt - pinch
- unsalted butter - 1/2 cup
- packed dark brown sugar - 3/4 cup
- light corn syrup - 2 T
- pure vanilla extract - 1t
- baguette or crusty loaf of bread, cut into 1-inch slices - 1 pound loaf
Instructions:
Butter bottom and sides of a 9 x 9 inch baking pan. Place bread slices, standing up in pan; set aside. Prepare custard -- whisk together eggs, milk, cream, vanilla, cinnamon and salt until well combined. Pour mixture evenly over all the bread slices in the pan. Cover pan tightly with foil or plastic wrap, place in the refrigerator overnight.
Remove the french toast casserole from the refrigerator and set it on a baking sheet. Melt the butter, add brown sugar and corn syrup, whisk well to combine and sugar is melted and mixture is hot. Slowly whisk in vanilla. Evenly pour sugar mixture over the bread, covering each slice well. Place casserole, on a baking sheet, bake in a preheated 350 degree oven for 40 - 45 minutes until puffy and golden and baked through. Casserole will deflate as it cools. Serve warm with mixed berries.
