Tiramisu French Toast
Ingredients:
- mascarpone - 8 ounces
- expresso - 2 ounces
- whipping cream - 1/2 cup
- eggs - 4
- vanilla extract - 2 t
- salt - pinch
- cinnamon - pinch
- challah bread, sliced 1 inch thick - 8 slices
- coconut oil - for frying
- whipped cream - for garnish
- chopped pistachios - for garnish
Instructions:
In a bowl, whisk together marscapone, espresso, whipping cream, eggs, vanilla, salt and cinnamon until smooth. Soak challah slices in the mixture for at least 10 minutes.
In a heavy skillet, melt enough coconut oil to generously grease skillet, add soaked challah slices. Cook over medium heat for 5 - 6 minutes until golden brown on each side and cooked through in the center. Serve hot, with syrup, garnish with whipped cream and chopped pistachios.
