Tiramisu French Toast
Ingredients:
- challah bread or any sweet bread - 12 slices
- eggs - 3
- heavy cream - 1/2 cup
- mascarpone cheese - 1/2 cup
- powdered sugar - 1/2 cup
- espresso powder - 2 T
- dark rum or vanilla extract - 1/4 cup
- salt - 1/4 tsp
- butter - for frying
- Filling --
- macarpone cheese - 1 1/2 cups
- powdered sugar - 1/4 cup
- espresso powder - 2 tsp
- salt - pinch
- Garnish --
- unsweetened cocoa powder - 2 T
- powdered sugar - 2 T
Instructions:
In a shallow pan, whisk together eggs, cream, cheese, powdered sugar, espresso, rum and salt. Place as many slices of bread as you can in a single layer in the egg mixture, soak on one side for 5 minutes. Flip bread slices, soak for another 5 minutes.
In a non-stick pan, melt 1 T butter over medium high heat. Carefully remove bread from egg mixture; allow excess liquid to drip back into the pan. Fry each slice for 2 - 3 minutes per side, or until bread is golden brown on both sides.
Place fried French toast in a parchment paper covered sheet pan; keep warm in a preheated 300 degree oven.
Continue with remaining slices.
Prepare filling -- in a small bowl, stir together cheese, powdered sugar, espresso powder and salt until mixture is smooth and espresso powder has melted.
To serve -- place one piece of French toast on a plate, spread with ¼ cup filling mixture. Place a second piece of French toast on top of the filling to create a sandwich.
Garnish with 1 tsp cocoa and 1 tsp powdered sugar sprinkled over the top. Serve with maple syrup
