Caramel Cheesecake Dip/Topping
Ingredients:
- cream cheese, softened - 8 ounces
- butter, softened - 1/2 cup
- caramel sauce, divided - 3/4 cup
- powdered sugar - 1/3 cup
- vanilla instant pudding mix - 1/3 cup (about 1/2 of a 5.1 ounce box)
- vanilla extract - 1 t
- ground cinnamon - 1 t
- pecans, toasted - 1 cup
- mini chocolate chops - 1/2 cup
Instructions:
In a bowl beat together cream cheese and butter until light and fluffy. Beat in 1/2 cup caramel sauce until smooth. Mix in powdered sugar and dry pudding mix. Stir in cinnamon and vanilla extract. Fold in chocolate chips and 3/4 cup pecans. Place mixture in a mound in serving bowl, pour 1/4 cup caramel over top, sprinkle 1/4 cup pecans over top.
Serve immediately or cover and place in refrigerator until serving time. Serve with shortbread, graham crackers, pretzels, fruit, etc. Can also be used as a frosting for donuts, cookies, cake, etc.
