Apple Cake with Caramel Topping
Ingredients:
- sugar - 2 1/2 cups
- eggs - 3
- vegetable oil - 1 1/2 cups
- flour - 3 cups
- vanilla extract - 2 t
- chopped walnuts OR pecans - 1 cup
- diced apples - 2 1/2 cups
- butter - 3/4 cup
- brown sugar - 2 cups
- milk - 1/4 cup
- powdered sugar - 1 cup
- vanilla extract - 1/2 t
- milk - 1 - 2 T
Instructions:
Cream together sugar, eggs, and oil; add flour, mix until well blended. Stir in vanilla, nuts and apples.
Spread mixture into a greased and floured 13 x 9 inch bakingpan; bake in a preheated 350 degree oven for 45 - 60 minutes, until toothpick inserted in center comes out clean. When cake is done, poke holes in the top with a knife and pour caramel over top.
Prepare caramel topping -- in a saucepan over medium heat, bring butter, brown sugar and 1/4 cup milk to a boil, stir constantly; boil for 2 minutes; pour over warm cake.
Prepare frosting -- in a bowl mix powdered sugar, vanilla and milk, 1 tablespoon at a time, until it reaches consistency to drizzle over the cake. Drizzle over cake.
