Apple Cake with Rum
Ingredients:
- flour, spooned into measuring cup and leveled-off - 1 cup
- baking powder - 1 tsp
- salt - 1/4 tsp
- unsalted butter, room temperature - 1/2 cup
- sugar - 2/3 cup plus 1 T for sprinkling
- eggs - 2 large
- vanilla extract - 1 tsp
- dark rum - 3 T
- apples, peeled, cored, cut into 1/2-inch cubes - 2 sweet baking
Instructions:
In a small bowl, whisk together flour, baking powder and salt. In a second bowl, cream butter and 2/3 cup sugar until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Beat in vanilla and rum. (Batter will look grainy.) Add flour mixture and mix on low speed until just combined. Fold in the apples.
Pour batter into a 9 inch springform coated with nonstick cooking spray; sprinkle top with 1 T sugar.
Bake in a preheated 350 degree oven for 40 minutes, or until cake is lightly golden and a toothpick inserted into the center comes out clean. Cool cake until just warm. Run a blunt knife around the edges of the cake, remove the sides of the springform pan. If desired dust with powdered sugar.
Serve warm or at room temperature, with whipped cream or vanilla ice cream.
