Apple Fritter Cake
Ingredients:
- sliced apples - 1 heaping cup
- sugar - 1/3 cup
- cinnamon - 1/4 t
- fresh grated nutmeg - small pinch
- cornstarch - 2 T
- water - 2 t
- butter - 1/3 cup
- sugar - 3/4 cup
- applesauce - 1/2 cup
- vanilla - 1 t
- eggs - 2
- flour - 2 1/4 cups
- baking powder - 1 t
- baking soda - 1 t
- salt - 1 t
- cinnamon - 1 t
- sourcream - 1 cup
- powdered sugar - 2 cups
- vanilla - 1 t
- milk - 6 T
- brown sugar - 1/2 cup
- cinnamon - 1/2 t
Instructions:
Prepare filling - In a saucepan combine apples, 1/3 cup sugar, water, 1/4 t cinnamon and cornstarch. Cook on low heat for 5 - 7 minutes, stir constantly until the sauce thickens and apples are a bit soft; set aside to cool. In a bowl, mix together 1/2 cup brown sugar and 1/2 t cinnamon; set aside.
Prepare cake -- In a bowl cream butter and 3/4 cup sugar until light and fluffy, add applesauce and vanilla, mix well. Add eggs, one at a time, beating after each addition. Sift together flour, baking powder, baking soda, salt and 1 t cinnamon. Add dry ingredients to the batter in three parts alternating with the sour cream in two parts, beginning and ending with dry ingredients. Beat until just combined.
Spoon half of the batter into a greased and floured 9 x 13 inch baking pan. Carefully spoon apple mixture over the batter and spread as evenly as possible. Sprinkle 2/3 of sugar cinnamon mixture over apples and spoon on the rest of the batter. Sprinkle remaining sugar cinnamon mixture over the top. Bake in a preheated 350 degree oven for 45 - 55 minutes, until a toothpick inserted in the center of the cake comes out clean.
Prepare glaze while cake is baking -- in a bowl, mix powdered sugar, 1 t vanilla and milk until desired consistency is reached. Remove cake from oven, immediately, pour glaze evenly over hot cake. Let cake sit for awhile for the glaze to set.
