Apple Pie Cupcakes
Ingredients:
- butter, divided - 6 T
- Granny Smith apples, peeled, cut into 1/4 inch cubes - 2 large
- cinnamon - 1/2 t
- salt - 1/8 t
- fresh lemon juice - 1 1/2 T
- flour - 1/4 cup
- packed brown sugar - 1/4 cup plus 2 T
- chopped walnuts - 1/4 cup
- refrigerated cinnamon rolls - 12.4 ounce can (8 roll count)
- whipped cream -
- caramel syrup -
Instructions:
In a skillet, melt 2 T butter over medium high heat, add apples, stir occasionally, cook until softened. Sprinkle with 2 T brown sugar, cinnamon and salt. Cook until apples are tender, stir in lemon juice.
In a bowl, mix 4 T butter, flour, 1/4 c brown sugar and walnuts with fork until crumbly; set aside.
Separate dough, flatten each into 4 inch round; place in bottom and sides of 8 greased muffin cups. Evenly divide apple filling into the muffin cups. Evenly divide flour mixture over apples. Bake in a preheated 400 degree oven for 10 - 12 minutes or until bubbly and tops are lightly brown. Cool slightly before removing from pan, completely cool. Garnish with whipped cream and a drizzle of syrup.
