2 c flour
1 T baking powder
1 t salt
3 ripe bananas
1/2 c butter, room temperature
2 c sugar
2 eggs
1 t vanilla
1 c milk
In a bowl whisk together flour, baking powder and salt. set aside.
In another bowl mash bananas until they become liquefied. Mix in butter until combined, stir in sugar, eggs and vanilla until mixed well. Add milk and flour, stir until combined, set aside. Prepare crumb topping –
1 c cold butter, cubed
2 c light brown sugar
2 c flour
In a bowl combine ingredients together with a pastry cutter until a coarse crumb forms.
Pour 1/2 of the batter into a greased 9×13 inch pan. Top with 1/3 of the crumb mixture. Cover with remaining batter and top with remaining crumb mixture.
Bake at 350 degrees for 50-55 minutes until the center is set and a toothpick comes out clean. Cool for 10 minutes. Make glaze –
1 c powdered sugar
1-2 T milk
Mix powdered sugar and milk together and drizzle over cake.
Serve warm or at room temperature.
