Banana Cake
Ingredients:
- brown sugar, packed - 1/3 cup
- flour - 1/4 cup
- ground cinnamon - 1/4 tsp
- butter OR margarine, cold - 2 T
- chopped pecans - 3/4 cup
- fully riipe bananas, mashed - 1 1/3 cups (about 4)
- fresh lemon juice - 1 tsp
- vanilla extract - 2 tsp
- flour - 2 cups
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- ground cinnamon - 1/8 tsp
- salt - 1/2 tsp
- butter OR margarine, softened - 1/2 cup
- brown sugar, packed - 3/4 cup
- sugar - 1/2 cup
- eggs - 2 large
Instructions:
Prepare topping - In bowl, combine 1/3 cup brown sugar, 1/4 cup flour and 1/4 tsp cinnamon. With pastry blender, cut in 2 T butter until mixture resembles coarse crumbs. Stir in pecans; set aside.
Prepare cake -- in a bowl, mix together bananas, juice and vanilla. In another bowl, mix together 2 cups flour, baking powder, baking soda, 1/8 tsp cinnamon and salt. In a bowl, with mixer on medium speed, beat 1/2 cup butter, 3/4 cup brown sugar and 1/2 cup sugar until light and creamy. Add eggs, 1 at a time, beat after each addition. On low speed, alternately flour and banana mixtures, beginning and ending with flour mixture; beat until smooth. Spread batter evenly into a greased 13 x 9 inch baking pan. Sprinkle crumb topping over top.
Bake in preheated 350 degree oven for 25 - 30 minutes or until toothpick inserted in center comes out clean. Cool cake in pan on wire rack.
