Banana Cake with Cream Cheese Frosting
Ingredients:
- bananas, mashed, ripe - 1 1/2 c
- lemon juice - 2 t
- flour - 3 c
- baking soda - 1 1/2 t
- salt - 1/4 t
- butter, softened - 3/4 c
- sugar - 2 1/8 c
- eggs - 3
- vanilla - 2 t
- buttermilk - 1 1/2 c
- butter, softened - 1/2 c
- cream cheese, softened - 8 ounces
- vanilla - 1 t
- powdered sugar - 3 1/2 c
- chopped walnuts -
Instructions:
In a bowl mash bananas with lemon juice; set aside. In another bowl, mix together flour, baking soda and salt; set aside. In a bowl, cream 3/4 c butter and sugar until light and fluffy. Beat in eggs, one at a time, stir in 2 t vanilla. Beat in flour mixture alternately with the buttermilk. Stir in banana mixture.
Pour batter into greased and floured 9 x 13 inch pan. Bake in preheated 275 degree oven for one hour or until toothpick inserted in center comes out clean. Remove cake from oven and place in the freezer for 45 minutes.
Prepare frosting - In a bowl cream, butter and cream cheese until smooth, beat in 1 t vanilla. Add powdered sugar, beat on low speed until combined, then on high speed until frosting is smooth. Spread frosting on cooled cake, sprinkle walnuts over the top.
