Brownies with Cookie Dough Frosting
Ingredients:
- butter - 1 cup
- semi sweet chocolate chips - 2 cups
- sugar - 2 cups
- eggs - 4
- vanilla extract - 2 t
- flour - 1 1/2 cups
- salt - 1/2 t
- baking powder - 1 t
- unsweetened cocoa powder - 1/2 cup
- butter, softened - 1/2 cup
- light brown sugar - 3/4 cup
- vanilla extract - 1 t
- flour - 1 1/4 cups
- salt - 1/2 t
- whole milk - 1/3 - 1/2 cup
- mini chocolate chips - 1 cup
Instructions:
Prepare brownies -- in a large microwave save bowl, melt 1 cup butter and 2 cups chocolate chips. Stir every 30 seconds, until chips are melted and mixture is smooth. Stir in 2 cups sugar, add eggs one at a time, stir until smooth. Stir in vanilla. Mix in flour, 1/2 t salt, baking powder and cocoa powder until well incorporated.
Spread batter evenly in a lightly greased 13 x 9 inch baking pan. Bake in a preheated 350 degree oven for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
Prepare frosting -- in a bowl, beat 1/2 cup butter and brown sugar together until smooth. Beat in 1 t vanilla. Add 1 1/4 cup flour and 1/2 t salt, beat until well combined and dough is thick. Slowly add milk until frosting is desired spreading consistency. Stir in mini chocolate chips. Spread frosting over brownies. Cut into squares.
