Butter Cake
Ingredients:
- butter, softened - 1 cup
- sugar - 2 cups
- eggs - 4
- vanilla extract - 2 tsp
- flour - 3 cups
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/2 tsp
- buttermilk - 1 cup
- butter sauce --
- sugar - 1 cup
- butter, cubed - 1/2 cup
- water - 1/4 cup
- vanilla extract - 1 1/2 tsp
- almond extract - 1 1/2 tsp
Instructions:
In a bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Add eggs, one at a time, beating after each addition; beat in 2 tsp vanilla. In a second bowl, combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beat after each addition. Pour into a greased and floured 10 inch tube pan.
Bake in a preheated 350 degree oven for 65 - 70 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan for 10 minutes. Run a knife around edges and center tube of pan. Invert pan onto a wire rack over waxed paper.
Prepare butter sauce -- in a saucepan, cook over medium heat 1 cup sugar, 1/2 cup butter and water, just until butter is melted and sugar is dissolved. Remove from heat; stir in extracts. Poke holes in the top of the warm cake; spoon 1/4 cup sauce over cake. Let stand until sauce is absorbed. Repeat twice. Poke holes into sides of cake; brush remaining sauce over sides. Cool completely before serving.
