Buttermilk Pecan Cake
Ingredients:
- butter - 1/2 cup
- light brown sugar - 2 cups
- eggs - 2
- buttermilk - 2 cups
- vanilla extract - 2 t
- baking soda - 2 t
- salt - 3/4 t
- flour - 3 cups
- butter, melted - 6 T
- light brown sugar - 1 cup
- milk - 1/4 cup
- salt - 1/8 t
- chopped pecans - 2/3 - 1 cup
Instructions:
Cream butter and 2 cups brown sugar together, add eggs and beat till smooth. Stir in buttermilk and vanilla extract. Add baking soda, 3/4 t salt and flour to the wet ingredients, beat until thoroughly combined.
Pour batter into a greased 13 x 9 inch baking pan. Bake in preheated 350 degree oven for 35 minutes or until toothpick inserted in middle comes out clean. Towards the end of the baking time, prepare the topping --
Stir butter and 1 cup sugar together; add milk, pecans and 1/8 t salt. Topping will be thick but pourable. Top baked cake with the topping, and return to the oven for 10 minutes. Remove the cake from the oven. The topping will look runny but will set up.
