Carolyn’s Apple Bundt Cake
Ingredients:
- margarine - 1 cup
- sugar - 2 cups
- flour - 3 cups
- baking soda - 1 1/2 t
- cinnamon - 1 1/2 t
- salt - 1/2 t
- chopped apples - 3 cups
- vanilla extract - 2 t
- brown sugar - 1/2 cup
- butter - 1/4 cup
- milk - 2 T
- powdered sugar - 1 1/4 cup
Instructions:
In a bowl, cream together margarine and sugar. Combine flour, baking soda, cinnamon and salt together, add to sugar mixture. Fold in apples and 2 t vanilla.
Spoon into a well greased and floured bundt pan. Bake in a preheated 350 degree oven for 45 - 60 minutes until a toothpick inserted comes out clean.
Prepare glaze -- in a small pan, combine brown sugar and 1/4 cup butter, bring to a boil. Boil for 2 minutes, add milk, bring to a boil; cool. Stir in powdered sugar. If too thick add another T of milk. Frost warm cake.
