Chocolate Chip Coffee Cake
Ingredients:
- flour - 2 cups
- baking powder - 1 t
- baking soda - 1/2 t
- salt - 1/4 t
- unsalted butter, room temperature - 1 cup
- cream cheese, softened - 8 ounces
- sugar - 1 1/4 cup
- eggs - 2
- vanilla extract - 1 t
- milk - 1/4 cup
- semi sweet chocolate chips - 1 cup
- flour - 1/4 cup
- sugar - 1/4 cup
- brown sugar - 1/4 cup
- cinnamon - 1 t
- butter, soft - 2 T
- semi sweet chocolate chips - 1/4 cup plus 2 T
Instructions:
Lightly grease and flour a 9-inch spring form pan; set aside. In a bowl combine flour, baking powder, baking soda and salt; set aside. In a bowl beat 1 cup butter, cream cheese and 1 1/4 cup sugar until creamy, beat in eggs and vanilla. Add flour mixture alternating with milk, stir in 1 cup chocolate chips. Pour into prepared pan. Sprinkle streusel over top of batter.
Prepare streusel -- in a bowl combine flour, sugar, brown sugar and cinnamon, cut 2 T butter into dry ingredients. Mix in 1/4 cup chocolate chips, evenly sprinkle mixture over batter. Sprinkle 2 T chocolate chips over streusel. Bake in a preheated 350 degree oven for 55 - 60 minutes, until toothpick inserted in center comes out clean. DO NOT OVER BAKE. Cool in pan for 15 minutes, before removing from pan, carefully run a knife around edge of pan, remove ring. Serve warm.
