Chocolate Italian Love Cake
Ingredients:
- chocolate cake mix plus ingredients listed on box - 1 box
- ricotta cheese - 2 pounds
- eggs - 4
- sugar - 3/4 cup
- pure vanilla - 1 t
- instant chocolate pudding - 5.1 ounce box
- cold milk - 1 cup
- Cool Whip, thawed - 8 ounces
Instructions:
Prepare cake mix per directions on box; set aside. In bowl, beat together cheese, eggs, sugar and vanilla until smooth.
Spread cake batter EVENLY into a greased 13 x 9 inch baking dish. Carefully pour cheese mixture EVENLY over cake. (During the baking process the layers will switch -- cheese layer will be on the bottom of the pan and the cake on top.)
Bake in a preheated 350 degree oven for 1 hour. Remove from the oven; place on wire rack, COOL COMPETELY.
Prepare frosting -- whisk pudding mix and milk together until combined. Fold Cool Whip into the pudding until combined. Spread over cooled cake. Cover, place in refrigerator for at least 6 hours before serving.
