Chocolate Zucchini Cake
Ingredients:
- butter, room temperature - 1/2 cup
- canola oil - 1/2 cup
- sugar - 1 3/4 cups
- eggs - 2
- buttermilk - 1/2 cup
- vanilla - 1 t
- flour - 2 1/2 cups
- cocoa - 4 T
- baking soda - 1 t
- cinnamon - 1 t
- baking powder - 1/2 t
- salt - 1/4 t
- grated zucchini - 2 cups
- brown sugar - 1/2 cup
- chopped pecans - 1/2 cup
- chocolate chips - 1 cup
Instructions:
Prepare topping -- in a bowl, mix together brown sugar, pecans and chocolate chips; set aside.
Prepare cake -- in a bowl, combine butter, oil, sugar and eggs, mix on low until light and smooth. Add buttermilk and vanilla, mix until completely combined.
In a bowl, whisk together flour, cocoa, soda, cinnamon, baking powder and salt. Gradually add dry ingredients into butter mixture, mix just until combined. Fold in zucchini. Spread batter evenly in a greased 9 x 13 inch pan. Sprinkle with topping. Bake in a preheated 350 degree oven for 35 - 40 minutes or until toothpick comes out with a few moist crumbs attached. Serve warm or cool. Store tightly covered.
