Chocolate Zucchini Cupcakes
Ingredients:
- butter - 1/2 cup
- sugar - 1 cup
- flour - 1 cup
- zucchini, shredded - 1 cup
- unsweetened cocoa powder - 1/4 cup
- bittersweet chocolate - 3 ounces
- sour cream - 3 T
- coarse salt - 1/2 tsp
- vanilla extract - 1/2 tsp
- egg - 1
- walnut halves - 24
Instructions:
In a bowl, stir together butter, sugar, salt and egg until combined. Add vanilla, zucchini and sour cream; stir until combined. Sift flour and cocoa powder into bowl; stir until combined. Stir in chocolate.
Spray two mini muffin pans with cooking spray. Fill each cup with 2 T batter; top with a walnut half.
Bake in a preheated 350 degree oven for 15 - 17 minutes, until a toothpick inserted in center of a muffin comes out clean. Let muffins cool slightly in pans on wire racks.
