Churro Cupcakes
Ingredients:
- egg, room temperature - 1
- egg yolks, room temperature - 2
- sour cream - 1/2 cup
- salted butter, softened - 1/2 cup
- vanilla extract - 2 tsp
- flour - 1 1/2 cups
- sugar - 3/4 cup
- brown sugar - 1/4 cup
- baking soda - 1/2 tsp
- baking powder - 1/2 tsp
- salt - 1/2 tsp
- cinnamon - 1 1/2 tsp
- Frosting --
- cream cheese, softened - 5 ounces
- salted butter, softened - 1/4 cup
- powdered sugar - 2 cups
- vanilla extract - 1 tsp
- cinnamon - 1/2 tsp
- Topping --
- cinnamon - 1 tsp
- sugar - 1 tsp
Instructions:
In a bowl, whisk egg yolks and egg together, add butter, sour cream and vanilla; mix.
In a second bowl, stir together flour, sugar, brown sugar, baking soda, baking powder, salt and cinnamon. Add dry ingredients to the wet ingredients; mix for one minute, or until smooth. Pour batter into cupcake liners.
Bake in a preheated 350 degree oven for 16 -20 minutes, or until a toothpick stuck in the center comes out clean. DO NOT over bake. Completely cool before frosting.
In a small bowl, mix together 1 tsp cinnamon and 1 tsp sugar; set aside.
Prepare frosting -- in a bowl, beat until smooth cream cheese and butter. Slowly add powdered sugar; mix. Add vanilla and cinnamon, mix until smooth and creamy. Spread frosting over cupcakes and sprinkle cinnamon sugar over top.
Yields 20 cupcakes.
