Cinnamon Roll Cake
Ingredients:
- white cake mix - 1 box
- Cinnamon Dolce Coffee Creamer - 1/2 cup
- milk - 1/2 cup
- oil - 1/3 cup
- eggs - 3
- butter, melted - 1/2 cup
- brown sugar - 3/4 cup
- cinnamon - 2 t
- sweetened condensed milk - 3/4 cup
- butter - 1/2 cup
- powdered sugar - 2 cups
- whipping cream - 1/2 cup
- vanilla extract - 1 t
- cinnamon chips - garnish
Instructions:
In a bowl, beat until smooth, dry cake mix, coffee creamer, milk, oil and eggs. Pour batter into greased 13 x 9 inch baking pan. Bake in preheated 350 degree oven for 20 - 25 minutes, or until a toothpick comes out with a few crumbs. Let cake cool for 10 minutes.
While cake is cooling, whisk together 1/2 cup melted butter and brown sugar. Microwave butter and sugar for 30 - 40 seconds, until sugar is dissolved, whisk half way through. Add condensed milk and cinnamon to the butter mixture; mix. With the handle of a wooden spoon, poke holes in the warm cake. Pour sugar mixture over cake. Place cake in refrigerator for 2 - 3 hours to cool.
Prepare topping -- cream 1/2 cup butter, add 1 3/4 cup powdered sugar; mix until smooth. Add whipping cream and vanilla; mix until combined. Add 1/4 cup powdered sugar and mix for 3 - 4 minutes, until light and fluffy. Spread topping over cake, sprinkle cinnamon chips over top. Store cake, covered in the refrigerator.
