Cinnamon Roll Pound Cake
Ingredients:
- butter, softened - 1 cup
- vegetable shortening - 1/2 cup
- sugar - 3 cups
- eggs - 5
- flour - 3 cups
- salt - 1/2 t
- baking powder - 1/2 t
- milk - 1 cup
- vanilla extract - 1 t
- cinnamon sugar - 1/4 cup
- cream cheese, softened - 2 ounces
- vanilla - 1 t
- powdered sugar - 1 1/2 cups
- milk - 1 T
Instructions:
Cream butter, shortening and sugar together. Add eggs, 1 at a time, beat after each addition. In a bowl combine flour, salt and baking powder add to butter mixture alternately with milk, starting with the flour and ending with flour, mix in vanilla. Grease and flour 2 loaf pans. Pour ⅓ of batter into loaf pans. Sprinkle half of cinnamon sugar mixure over batter. Repeat with 1/3 batter, then cinnamon sugar, end with remaining batter. Bake in a preheated 350 degree oven for 1 hour or until toothpick inserted into the center comes out clean. Remove from pan, let cake cool before frosting.
Prepare frosting -- in a bowl whisk together cream cheese, vanilla, powdered sugar and milk until smooth. Spread over top of cooled cake. Allow frosting to set up before slicing.
