Cookie Cake
Ingredients:
- maple syrup - 1/4 cup
- almond butter - 1/4 cup
- coconut oil, melted - 1/4 cup
- vanilla extract - 1 tsp
- cinnamon - 1/2 tsp
- salt - 1/8 tsp
- almond flour - 2 cups
- baking soda - 1/4 tsp
- baking powder - 1/4 tsp
- chopped dark chocolate - 1/2 cup
- toppings --
- dried coconut ribbons - 1/4 cup
- macadamia nuts, chopped - 1/4 cup
- dark chocolate, chopped - 2 - 3 squares
Instructions:
In a bowl, mix together with a fork, coconut oil, maple syrup, almond butter, vanilla, cinnamon and salt. Sprinkle in flour, baking soda and baking powder, mix with a fork until ingredients form a dough. Add chocolate, mix well.
Press dough into a 6 inch round cake pan lined with parchment paper. Sprinkle top with coconut, nuts and chocolate.
Bake in a preheated 350 degree oven for 30 minutes. Cool completely in the pan. Remove, serve immediately. Can be stored in a airtight container at room temperature for 3 - 4 days.
