Crumb Cake
Ingredients:
- butter, softened - 1/2 cup
- sugar - 1 cup
- eggs - 2
- sour cream - 8 ounces
- vanilla extract - 1 tsp
- flour - 1 1/2 cups
- baking soda - 1 tsp
- salt - 1/4 tsp
- topping --
- sugar - 12 cup
- chopped walnuts - 1/4 cup
- flaked coconut - 2 T
- ground cinnamon - 2 tsp
Instructions:
In a bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beat well after each addition. Beat in sour cream and vanilla. In a bowl, combine flour, baking soda and salt; add to the creamed mixture; mix well. Spread half of mixture into a greased 9 x 9 inch baking pan.
Prepare topping -- in a bowl, combine sugar, walnuts, coconut and cinnamon, sprinkle half of walnut/ coconut mixture over batter. Carefully spread remaining batter over ; sprinkle with remaining topping. With a knife, gently swirl topping through batter.
Bake in a preheated 350 degree oven for 35 - 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes on a wire rack. Serve warm.
