Fruit Cocktail Cake with Coconut Icing
Ingredients:
- sugar - 1 1/2 c
- eggs - 2
- flour - 2 c
- chopped nuts - 1 c
- fruit cocktail with syrup - 16 ounce can
- baking soda - 2 t
- brown sugar - 1/ 4 c
- butter - 1/2 c
Instructions:
In a bowl mix together sugar, eggs, fruit cocktail, baking soda and flour. Pour into a greased and floured 9 x 13 inch baking pan. In a bowl combine brown sugar and nuts; sprinkle over batter.
Bake in a preheated 325 degree oven for 40 minutes.
While cake is baking, prepare coconut icing-- In a sauce pan melt butter, stir in coconut, brown sugar and milk; boil for 2 minutes. Spread over HOT cake. Let cool and serve. Store in refrigerator after 24 hours.
