Kahlua Cake in a Mug
Ingredients:
- flour - 5 T
- sugar - 4 1/2 T
- unsweetened cocoa - 2 tsp
- baking soda - 1/4 tsp
- salt - dash
- white vinegar - 1/2 tsp
- vanilla extract - 1/4 tsp
- canola oil - 2 tsp
- brewed coffee (cold or room temperature) - 4 T
- Kahlua - 1/2 T
Instructions:
Spray the inside of a large microwave safe mug with non-stick cooking spray. In the mug, stir together flour, sugar, cocoa, baking powder and salt. Make 3 depressions in dry ingredients. Pour vinegar in one depression, vanilla in the second and vegetable oil in third depression. Pour coffee and Kahlúa over top. With a fork mix together until smooth.
Cook uncovered in a microwave on high for 1 minute 20 seconds - 2 minutes, until a toothpick inserted in the center of the cake comes out clean. (WARNING each microwave cooks different, so cooking time will vary) DO NOT OVER COOK.
Garnish with desired toppings frosting, chocolate chips, whipped cream or etc.
