Lime Cake
Ingredients:
- lime flavored gelatin - 3 ounce package
- sugar - 1 1/3 cups
- flour - 2 cups
- salt - 1/2 t
- baking powder - 1 t
- baking soda - 1 t
- eggs, slightly beaten - 5
- vegetable oil - 1 1/2 cups
- orange juice - 3/4 cup
- lemon juice - 1 T
- vanilla - 1/2 t
- fresh Key lime juice - 1/2 cup
- powdered sugar - 1/2 cup
- butter, room temperature - 1/2 cup
- cream cheese, room temperature - 8 ounce package
- powdered sugar - 1 pound
- lime zest - for garnish
Instructions:
In a bowl, mix together gelatin, sugar, flour, salt, baking powder and baking soda. Add eggs, oil, orange juice, lemon juice and vanilla. Divide batter evenly between 3 - 9 inch greased and floured pans. Bake in a preheated 350 degree oven for 35 - 40 minutes or until a toothpick inserted in the center comes out clean. Cool cake in the pans for 5 minutes, remove and place on wire rack to cool.
While cake is hot, mix together 1/2 cup lime juice and 1/2 cup powdered sugar and pour evenly over the cakes (pierce cake with a fork to allow the glaze to soak in). Cool completely. Prepare icing -- In a bowl cream together butter and cream cheese. Beat in powdered sugar until the mixture is smooth and spreading consistency. Spread icing between the layers, top and sides of cake. Garnish with lime zest sprinkled over the top.
