Mixed Berries Buttermilk Cake
Ingredients:
- butter, softened - 1/4 cup
- sugar, divided - 1/2 cup plus 1 T
- egg - 1
- vanilla - 1 1/2 t
- flour - 1 cup
- baking soda - 1/2 t
- baking powder - 1/2 t
- salt - 1/4 t
- buttermilk - 1/2 cup
- frozen mixed berries DO NOT THAW - 12 ounce bag
Instructions:
In a bowl, beat butter and 1/2 c sugar together until light and fluffy, about 2 minutes. Add egg and beat, mix in vanilla. In a separate bowl, whisk together flour, baking soda, baking powder and salt. Add to wet ingredients, mix until just combined. Gradually pour in buttermilk and stir until incorporated, DO NOT over mix.
Spread batter evenly into a greased 9 inch round cake pan. Arrange frozen fruit evenly over top of batter. Sprinkle 1 T sugar over berries. Bake in preheated 400 degree oven for 30 minutes. Remove from oven, let stand for 10 minutes, then invert onto serving platter. Serve warm with vanilla ice cream.
