3/4 c plus 3 T flour
1/4 c plus 1 T brown sugar, packed
1/4 c sugar
dash of salt
1/4 t plus 1/8 t cinnamon
1/4 t plus 1/8 t nutmeg
1/4 c oil
Prepare topping – in a bowl, combine all ingredients except oil. Blend on low speed for 1 minute. Gradually add oil, continue to blend until topping is crumbly; set aside. Prepare cake–
3 3/4 c flour
1/2 c plus 2 T non-fat dry milk OR 1/2 c buttermilk
1 1/4 t salt
1 ts nutmeg
1 1/2 t cinnamon
3 1/2 t baking powder
3/4 t baking soda
2 T vinegar
1 1/2 c water
1 c plus 2 T oil
1 c sugar
1 1/4 c brown sugar
2 eggs
In a bowl, combine flour, dry milk, salt, nutmeg, cinnamon, baking powder and baking soda, set aside. Combine vinegar and water in a measuring cup; set aside.
In a bowl, blend together on low speed oil, brown sugar and sugar, add eggs and blend on low speed for 1 minute. With mixer is on low, alternately add dry ingredients and water mixture add to the oil mixture. Blend on medium speed for 1 minute. Pour batter into two greased 9 x 9 inch pans. Sprinkle 3/4 c topping over the batter in each pan. Bake in preheated 375 degree oven 45 – 55 minutes, until toothpick inserted into center of cake comes out clean.
