Pecan Pie Cupcakes
Ingredients:
- chopped pecans - 1 cup
- flour - 1/2 cup
- packed brown sugar - 1 cup
- butter, melted - 2/3 cup
- eggs - 2
Instructions:
In a medium bowl, combine all ingredients; mix well.
Spray a miniature muffin tin with Pam with flour. Fill each indention 3/4 full.
Bake in a preheated 350 degree oven for 18 minutes.
Cool for one minute, remove from pan, place on cooling rack. Do not let them cool in the pan. Yields 24 - 28
