Pineapple Cake
Ingredients:
- flour - 2 cups
- sugar - 2 cups
- eggs - 2
- chopped pecans - 1 cup
- baking soda - 2 t
- salt - 1/2 t
- vanilla extract - 1 t
- crushed pineapple with juice - 20 ounce can
- cream cheese, softened - 8 ounces
- butter, soft - 1/4 cup
- powdered sugar - 4 cups
- vanilla extract - 1 t
- chopped pecans - 1/2 cup
Instructions:
In a large bowl, whisk together flour, sugar, baking soda and salt. Add pineapple, 1 t vanilla and eggs, mix until combined. Fold in pecans.
Pour into a greased 13 x 9 inch baking pan. Bake in a preheated 350 degree oven for 35 minutes.
Cool cake before frosting.
Prepare frosting -- in a bowl, combine and beat until smooth cream cheese, butter and 1 t vanilla, slowly add powdered sugar. Spread over the cake and sprinkle top with 1/2 cup pecans.
