Pineapple Cake
Ingredients:
- sugar - 2 cups
- flour - 2 cups
- vegetable oil - 1/2 cup
- eggs - 2
- crushed pineapple with juice - 20 ounce can
- baking soda - 1 tsp
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- Frosting --
- sugar - 1 cup
- butter, cut into chunks - 1/2 cup
- evaporated milk - 2/3 cup
- salt - pinch
- sweetened shredded coconut - 3/4 cup
- toasted pecans, chopped - 1/2 cup
Instructions:
In a bowl, combine all cake ingredients, stir until evenly combined. Spread evenly in a greased 13 x 9 inch baking pan OR greased sheet pan. Bake in a preheated 350 degree oven for 30 - 35 minutes for a 13 X 9 inch pan OR 20 - 25 minutes for a sheet pan.
Prepare frosting while the cake bakes -- in a saucepan, combine sugar, butter, evaporated milk and salt. Bring to a boil, then lower heat, simmer and stir for 10 minutes. Stir in coconut.
Pour frosting over hot cake. Immediately sprinkle pecans over cake. Completely cool cake before cutting.
