Pineapple Poke Cake
Ingredients:
- white cake mix plus ingredients listed on box - 1 box
- crushed pineapple with juice - 8 ounce can
- white sugar - 1 cup
- cream cheese - 8 ounces
- butter,softened - 1/2 cup
- powdered sugar - 4 cups
- vanilla extract - 1 t
- chopped pecans - 1 cup
Instructions:
Prepare cake per directions on box. Bake in a 9 × 13 inch pan OR 2 round cake pans. Cool, poke holes in the top of cake with a fork. In a saucepan combine pineapple and sugar, bring to a boil, spoon over cooled cake.
In a bowl cream together butter and cream cheese until smooth. Add powdered sugar, beat until smooth. Add vanilla and pecans, mix well. Spread frosting over cake.
