Rhubarb Cake
Ingredients:
- Brown Sugar - 1 1/2 cups
- Shortening - 1/2 cup
- Egg - 1
- Sour Milk - 1 cup
- Baking Soda - 1 tsp
- Salt - 1/4 tsp
- Flour - 2 cups
- Rhubarb - 2 cups (diced, fresh or frozen)
- Vanilla - 1 tsp
- Topping
- White Sugar - 1/2 cup
- Cinnamon - 1 tsp
Instructions:
Cream brown sugar and shortening, add egg; mix. Stir in the milk alternately with the dry ingredients, stir in rhubarb. Evenly pour batter into a greased 13 x 9 inch cake pan.
In a bowl, mix together white sugar and cinnamon; sprinkle over top of cake batter.
Bake in a preheated 325 - 350 degree oven for 40 minutes till done.
