Smores Coffee Cake
Ingredients:
- butter, room temperature - 1/4 cup
- grape seed oil - 2 T
- sugar - 3/4 cup
- egg - 1
- flour - 1 3/4 cups
- baking powder - 1 1/2 t
- baking soda - 1/2 t
- salt - 1/2 t
- graham cracker crumbs - 1/2 cup
- greek yogurt - 1 cup
- chocolate chips - 1 cup
- big marshmallows, cut in half - 12 - 14
Instructions:
In a bowl beat sugar, butter and oil, on low speed until combined, add egg, with a spatula scrape the sides of the bowl.
In a second bowl combine flour, baking powder, baking soda, salt, graham crackers crumbs, add to sugar mixture alternately with the greek yogurt. Mix until just combined. Fold in chocolate chips.
Pour batter into 11 x 7 inch pan lined with parchment paper. Bake in preheated 375 degree oven for 25 - 30 minutes or until a toothpick comes out clean. Remove cake from the oven, turn oven to broil. Place marshmallows on top of cake. Place cake under broiler and broil for a few seconds until marshmallows are puffed and slightly brown. WATCH CLOSELY! Cool cake slightly on a wire rack before cutting.
