Sparkling Cider Pound Cake
Ingredients:
- butter, softened - 1/2 c
- shortening - 1/4 c
- sugar - 1 1/2 c
- eggs - 2
- butter extract - 1/2 t
- salt - 1/4 t
- baking powder - 1/4 t
- flour - 1 1/2 c
- sparkling cider - 1/2 c
- powdered sugar - 1 1/2 c
- spakling cider - 1/4 c
Instructions:
In a bowl, cream together butter, shortening and sugar. Beat in eggs one at a time, with the butter extract. In a bowl stir together salt, baking powder and flour. Add alternately with 1/2 c sparkling cider to the wet ingredients and beat well. Pour into a greased and floured 9 x 5 inch loaf pan. Bake in a preheated 325 degrees oven for about 60-70 minutes, until top is golden brown and a toothpick inserted comes out clean. Cool in the pan for 5-10 minutes, remove and place on wire rack to cool. Prepare glaze --
In a bowl, whisk sparkling cider and powdered sugar until smooth. Poor over cooled pound cake.
