Streusel Topped Coffee Cake
Ingredients:
- sugar - 2/3 cup
- brown sugar - 2/3 cup
- flour - 2/3 cup
- cinnamon - 1 1/2 T
- fresh grated nutmeg - 1/4 tsp
- ground cloves - 1/2 tsp
- salt - pinch
- butter, cut in chunks, microwaved for 10 seconds - 8 T
- Prepare coffee cake --
- flour - 3 cups
- baking powder - 1 T
- baking soda - 1 tsp
- salt - 1/2 tsp
- eggs - 3
- buttermilk - 1 1/4 cups
- sugar - 3/4 cup
- butter, melted - 8 T
Instructions:
Prepare streusel -- in a bowl, whisk together sugar, brown sugar, flour, cinnamon, nutmeg, cloves and salt. Add the butter, mix with your hands until you’ve formed moist crumbs; set aside.
Prepare cake -- in a bowl, combine flour, baking powder, baking soda and salt. In a second bowl, whisk together eggs, buttermilk, sugar and melted butter. Add egg mixture to flour mixture; mix until fully combined.
Evenly spread half of the batter into a greased 9 inch bundt pan, sprinkle half of the streusel over batter. Spread remaining batter on top and remaining streusel.
Bake in a preheated 350 degree oven for 35 - 40 minutes or until a skewer inserted into the center comes out clean. Cool completely before slicing.
